Red Rock Casino Resort has a good breakfast is not very expensive. Mandalay Bay also. I've been to both, and they were very good!

My favorite weekend brunch, for the moment is the Rio Hotel and Casino Carnival World Buffet.

I compare the quality of a house 3 or 4, with the exception of sushi.
